In French cooking, tarragon is used to flavour sauces like bernaise. Its refreshing, anise-like bouquet works equally well with poultry and, with a hint of lemon, is fantastic with white fish. Put it in leek soup, remoulade, rabbit in mustard or just put it in a dressing for green salad.
