This exceptional vanilla was born from a small batch cultivated in the village of Pamplemousse, on the island of Mauritius. In addition to its extraordinarily powerful fragrance, the chubby, aromatic beans are so chock full of vanillin that glittering crystals are literally visible on the surface of the beans.

The designation Burbon comes from the former name of Reunion Island, Île Burbon – so called in honour of the Royal clan whose kings hailed from the Bourbon dynasty. Only the variety vanilla planifolia, grown on Mauritius, Reunion Island, Madagascar, Comoros and the Seychelles, can legitimately claim the origin designation Burbon. Previously known as French vanilla, these beans are prepared according to traditional methods, which consequently bestows on them a rich and incomparable flavour.

Vanilla is traditionally used to flavor desserts, but it can also be used, sparingly, in poultry, fish or seafood dishes; the aroma of vanilla goes particularly well with scallops and shellfish.

Especially delicious when used in homemade ice creams, crèmes anglaises, as well as any savory dishes or desserts that would benefit from the classic hit of Burbon vanilla.
