Peychaud's Bitters, distributed by the American Sazerac Company, traces its roots back to the creative mind of Antoine Amédée Peychaud, a Creole apothecary from the former French colony of Saint-Domingue (now Haiti). In the years spanning 1849 to 1857, Peychaud crafted these bitters after his arrival in New Orleans, Louisiana, around 1793. Setting them apart from Angostura bitters, Peychaud's version is based on gentian with a distinctive aroma of anise complemented by subtle mint undertones.
Barrel Aged Peychaud's bitters offer a distinctive and limited edition experience that encapsulates the illustrious heritage of Peychaud's and traditional rye whiskey. These bitters undergo a meticulous aging process in Sazerac rye whiskey barrels for 140 days, resulting in a heightened complexity and a smoother character. With their flavorful and spicy twist, they effortlessly elevate any cocktail. Each drop carries nuanced nuances of oak, candied spice, and vanilla, reminiscent of the richness found in fine ryes, bourbons, and Sazerac whiskey. These bitters are a perfect complement to classic recipes calling for aromatic bitters, enhancing the overall taste profile.
Tasting Profile: Aromatic notes of anise, cloves, cinnamon, and nutmeg interplay with a gentle sweetness. Delicate hints of cherry, plum, and berry provide a fruity dimension, while a pronounced bitterness adds depth. Red currants contribute a subtle tartness, and the presence of numbing medicinal herbs completes the complex flavor profile.
